We’ve heard tell that the weather is going to be especially good tomorrow (Friday), so now’s the time to start thinking about how you want to enjoy the sunshine – and what could be better than a spot of al fresco dining out in the garden with friends, family and a couple of beers and cocktails.


Apparently it’s going to be the hottest day of the year so far and what perfect timing on a Friday… the best way to welcome in the weekend, that’s for sure! But what kind of recipes should you consider making if you don’t want to go down the time-honoured barbecue route? Here are a couple that might take your fancy.


Lemon sherbert ice

If you’re absolutely roasting and need to cool down in a cool yet delicious way, what about making BBC Good Food’s lemon sherbert ice? You’ll need three large lemons, some caster sugar and some citric acid, but it’s just the ticket and you’re sure to want to make it again.


Spanish tortilla

The tortilla is a classic dish and one that will always form part of your al fresco picnic menu after you’ve made it the first time. It’s easy to make and incredibly tasty into the bargain, and can be served either hot or cold, so store any leftovers if you’re feeling peckish later on.


Crab and avocado rolls

Check out this recipe on the Olive magazine website for crab and avocado rolls if you’re looking for a sandwich with a bit of a difference. With celery, tarragon, avocado, salad cress and a pinch of cayenne pepper, this sandwich will really elevate your picnic game.


Strawberry and balsamic salad

Strawberries are the most summery of all the fruits (and some of the healthiest for you, as well!), but instead of having them as a pudding, why not throw them in a salad instead? They go perfectly with balsamic vinegar, so work this in along with some red onion, mozzarella balls, avocado, cherry tomatoes – and whatever else you fancy!


Summer rolls

The clue’s in the name! Vietnamese summer rolls with peanut sauce would be an excellent addition to any al fresco dining table and you’ll have fun practicing your wrapping skills using rice paper. They’re stuffed with cooked shrimp, rice noodles and lots of fresh herbs and veggies.


Gazpacho

For starters, gazpacho is an amazing option and it’s incredibly refreshing with all the best flavours of summer in a bowl. It features ripe red tomatoes, yellow onion, cucumber, red bell pepper, fresh basil, garlic and sherry vinegar – a brilliant way to start any outdoor dining event.
